BEATING THE JANUARY BLUES – IN A MORTAR

How many mortars do you have? While I was working on Yashim Cooks Istanbul, I added another two to my kitchen collection, one stone, one made of olive wood. 

Various recipes in the book call for spices, nuts or even pulses to be beaten, chopped, crushed or pounded. Most cookbooks suggest giving your ingredients a quick spin in a food processor, but I fight shy. I can’t stand the noise, for one thing, or those rubber feet, or the clutter that a food processor brings into the kitchen. These machines have a horrid arsenal of blades and graters, rendering every drawer a danger to unwary fingers. They make me jump – and who wants to be jumpy in the kitchen?

Pestle and mortar, on the other hand, work just as they did when these dishes were first prepared, centuries ago in the kitchens at Topkapi Palace. They were there, in the shape of two stones, when cookery was invented: after fire, and a pot, perhaps even before decent knives, cooking must have involved crushing. Old stone querns, for grinding grain, belonged to the ancients and have entered myth. Baba Yaga, the Russian witch, flies about in a pestle and mortar. They are an elemental pairing – yin and yang: pestle is, of course, cognate with pizzle, which it basically resembles. That, I think, is cheerfully salacious.

Not that I am driven by myth and Luddism. Or not entirely. Yashim Cooks Istanbul isn’t an exercise in historical re-enactment, like making mediaeval rice of flesh in an iron bowl, or chucking up lark’s tongues in the vomitorium. The recipes in the book are simple, inspired by their Ottoman originals but not slavish. They are dishes I’d cook at home, any day of the week, as Yashim does in his Balat flat.

No – the advantages of the pestle and mortar are as practical as elemental, even if they aren’t all visible. What you do see, for starters, is the beauty of the tools, in the grain of the wood or the clean, clear lines of the stoneware. It’s that simple, a tool for the hand and another for the bench. In my kitchen, the mother of them all is the 12 gallon mortar in which, incredibly, you can crush the tiniest pinch of cumin with the merest roll of your weighty pestle.

You probably know that a proper pesto is always made in a mortar – just as basil is always torn, not chopped, for adding to a dish. Whirr a pesto in a food processor and you have a glaucous minced mess, whose oily perfume has been already dissipated by the whizzing blades. Beating the leaves, garlic and pine nuts in a mortar takes a little longer (though washing out processor jugs and bowls is another chore), but the whole thing breaks down the oils, and keeps the pesto cool as it should be.

The same thing applies to spices – or to chickpeas. The reviewer at Country Life Magazine called Yashim’s hummus ‘the best ever’, perhaps because I suggest using a pestle and mortar to reduce the chickpeas and garlic to a thick, uneven, consistency rather than the whirred-up paste you get from a plastic pot. There’s no way to grind spices better than a mortar, either; or to crush herbs. It’s about avoiding stress, not inducing it – nor inflicting it on your ingredients.

Pound away. It’s good exercise, and a therapy. Wonderful aromas rise like soothing balm, the action is physical but not exhausting, the sound is regular and human. It is the sound of somebody chopping wood down in the valley. It is as satisfactory as ringing a gong; and it makes you happy.

The pestle and mortar’s closest relations are the wooden chopping board and the sharp steel knife. A family resemblance also exists between a pestle and a rolling pin, as between the mortar and a pot. These are what cooking is about. These are the implements it requires. And not much else.

When, in An Evil Eye, Yashim observes that cooking is really about a sharp knife, he’s pleased to be given one forged of Damascus steel. With the blade he can flatten, crush, chop and slice anything. But when he wants to make muhammara or hummus, or grind spices or nuts for baklava – or roasted coffee beans – he turns to the pestle and mortar. His is a marble mortar, and the pestle has a handle of cherrywood or ash, attached to a marble bulb, whose significant weight does half his work.

It is primitive. But then living in Istanbul in the first half of the nineteenth century, Yashim knows nothing of the magimix.

Funnily enough, Ottomans seldom emigrated to the United States (an exception was a Syrian, Hadji Ali, aka Hi Jolly, who set up a camel corps for the Confederates during the Civil War), otherwise this stuffing would have delighted them.

Yashim Cooks Istanbul Storms US Charts!

You may imagine how thrilled I was to wake up to a fabulous piece about Yashim’s cook book on America’s number one radio show, Morning Edition. They gave it the great title: “Popular Detective Series Gets Its Own Cookbook” which is succinct, accurate and somehow funny. Very professional.

We did the interview about a month back, with Mary Louise Kelly of NPR, in my sister’s kitchen in London. Garlic, pumpkin AND fuzzy microphone.

Yashim Steps Out

I’m told that tickets for my first Yashim Cooks Istanbul gig have sold out, which has to be good news. Although I remember being told the same thing by the nice people at Faber at the launch party for The Janissary Tree, and wondering if publishers lived on the same planet as the rest of us.

Picture the scene: I assemble a hundred or so of my closest friends and relations, along with the great and the good of Fleet Street, Grub Street and the BBC, hire splendid Georgian rooms in Fitzroy Square, lay on everlasting fizz, engage professional belly dancers, no less – and half an hour into the jamboree the publishers come up smiling and rubbing their hands to tell me ‘We’ve sold out of books! Congratulations!’

Anyway, no more tickets for November 12th at the Bridport Literary Festival: but we have other things planned for later, elsewhere.

Many of you have asked when Yashim will emerge from his retirement and engage in a new adventure. Well, he has one rather short adventure chronicled in a collection of stories entitled SUNSHINE NOIR, all mystery stories by crime writers who eschew the frigid wastes of Scandinavia in favour of southerly heat and sweat (not but that it usually snows in Istanbul, but we will let that pass). My story is called Chronos and Kairos, about an occasion when Yashim borrowed a watch. Some of you may remember young Compston, of the British Embassy in Istanbul, bleating about his father’s Hunter in An Evil Eye: it’s that watch. Different occasion.

There are more than seventy five delicious and original recipes. They aren’t complex and they don’t need to you to go out and find wildly exotic ingredients. Turkish food isn’t like that – it’s more about simple spices, vegetable dishes, pilafs. There are recipes for lamb and fish, lots of salads, and little meze for snacks or starters. In Istanbul, it’s all about freshness and produce in season. Sometimes the simplest things are the most delicious.

More than one hundred Yashim fans generously volunteered as testers, trying out the recipes from Albania to Pakistan. Their feedback was fantastic, meaning that while the recipes are firmly rooted in the soil of the eastern Mediterranean – with a brief foray to the Veneto, and another into the grasslands of Poland – they have been cooked and approved all around the world!

Here is the cover design for YASHIM COOKS ISTANBUL, featuring the recipes used by Yashim, my Ottoman investigator, over the course of his five published adventures. They range from light meze to serious dishes, pilafs, puddings, pastries and pickles, imbued with Ottoman flavours.

So many of you urged me to write this book. It has meant a lot of testing and experimentation. So nettle pilaf didn’t make the cut; nor did Priest’s Stew, a beef daube with vinegar backnotes. Good, but not that good – but wait till you try the sensational beetroot pilaf! And please let me know what you think of the cover.

One of the great things about the book is that it allows me to take control, seeing it through from conception to design to edit to print. I’ve had some brilliant professional assistance, especially on design and editing. I’m talking to several printers, in the UK, China and Italy and – whoever gets the job – the book is going to be a feast. It will be a hard case book of 224 pages, full colour throughout, on tactile, bulky, offset woodfree paper. Head and tail bands, gorgeous endpapers. Final details to be decided.

As well as illustrating the recipes we have studded the book with stunning visual references that put Yashim’s Istanbul on display – Ottoman costume, street scenes, some really early photographs. The recipes are interlaced with scenes from the Yashim books which deal with food. The recipes themselves aren’t complex and they don’t need to you to go out and find wildly exotic ingredients. Turkish food isn’t like that – it’s more about warm spices, nuts, vegetable dishes, pilafs. There are recipes for lamb and fish, lots of salads, and little meze for snacks or starters. If you know Istanbul, you’ll know it’s about freshness, things in season, and sometimes the simplest things being the most delicious.

Mindfulness, Ottoman style?

The Ottomans, being meritocrats who rewarded talent over accidents of birth, were naturally keen on self-improvement. If you entered palace service, you were educated formally at first, and then expected to carry on improving your skills and learning new ones. By the end, if you were good, you were in a position to handle the demands of high office. You might even make it to Grand Vizier.

I shall never make vizier, but I approve of the Ottoman attitude to self-improvement. We all try to get better at what we do, and perhaps we should try to get better at things we don’t do, too, or didn’t until now. This year I set aside my books and learned how to restore an ancient house, how to write a screenplay using Final Draft and how to take photographs, principally of food. As many of you will know from your own experience, the effort proved enjoyable, and worthwhile.

I needed beautiful pictures to illustrate Yashim’s Istanbul Cook Book, for which many of you have already kindly tested recipes. I do have beautiful pictures of Ottoman Istanbul, with old maps, illustrations and engravings, to accompany the text and help evoke the atmosphere of Yashim’s Istanbul. I have lovely photographs of the modern city, its markets, ferries, domes and shops, to forge the link between Yashim’s time and our own. That leaves only the dishes themselves to be portrayed, hinting at their excellence.

Advised by a website called thewoksoflife I bought a new sort of lens, and took estimable advice and instruction available on the internet. Bearded professionals revealed some of the secrets of their craft on YouTube, camera buffs on chatrooms discussed the virtues of RAW and jpeg, and bloggers, in Manhattan lofts as in Cornish villages, showed off their cooking and photographic skills. Absorbing all this, I realised it came down to: the right lens, and the right sort of light. The right lens makes the background blur, which we photographers call bokeh, and the right light is daylight.

After that, all you need is delicious food, charming surfaces, acceptable crockery, table cloths, clean spoons, salt cellars and small bowls, a scattering of fresh parsley from your garden and a tripod, for which sometimes a box will serve. You also need a reflector, to chase away shadows. I was told I needed tweezers, too, for arranging salad leaves, but I skipped that. I relied on opposable thumbs.

Above all you need to get your food ready while it is still light, and you need to eat something yourself before you set it all out, otherwise you get hasty. And greedy.

YASHIM’S ISTANBUL COOK BOOK – a call for volunteers!

As you probably already know, Yashim the Investigator – the hero of my series of five mystery novels – is something of a cook. In an idle hour in his apartment in Balat, Istanbul, he will chop and simmer and stir and sprinkle, and rustle up some delicious meze, perhaps, or a grand main dish, all the while thinking about the case he’s on. It’s how he relaxes. It’s how he thinks. Sometimes it gives him a clue…

The books are full of recipes, and I hope they evoke the atmosphere of 19th century Istanbul – the way it looked, how it smelled, and what it all tasted like. For ages, people have been suggesting that I, the humble author, gather all Yashim’s recipes, and some more, together in one place – and I am pleased to say I’ve done it. Including baklava, of course.

Yashim’s Istanbul Cook Book is on its way.

It has dozens of authentic recipes for sauces and fish, for grills and breads, for vegetables and kebabs (and pickles, like those being sold by the guys above): Istanbul the year round! And we’ve dropped in passages from the novels, too, to go with them, and lots of fabulous illustrations.

The book has been designed by Clive Crook, the Art Director of Cornucopia Magazine, so it’s gorgeous as well as delicious.It’s being published in July.

I’ve cooked them all, again and again, but I badly want to know what your experience of following the recipe was like. Did it work? Were the quantities right for you? Were the instructions clear, or did they leave you furiously backpedalling while you ground the forgotten spices and the onions burned?!

A quick ‘It worked’ is all I need (though please don’t stint if you’d rather say more), and a pointer to what, if anything, seemed wrong. I’m hoping there’ll be no complaints but I’d rather discover that now than go to press with anything that isn’t 100% perfect.

Who’s Who in Yashim’s Istanbul

We must begin with the sleuth himself, of course. Yashim is as old as the 19th century, thirty six years old when he makes his first appearance in The Janissary Tree. He is the sultan’s confidential agent, or tebdil khasseky, in succession to Fevzi Ahmed – of whom much more in An Evil Eye (Yashim No. 4). Unlike Fevzi Ahmed, Yashim can visit anywhere and talk to anyone in Istanbul… for Yashim is a eunuch. Although he can make love, he will never father children.

You want to know how that works? Then you need to read Yashim No. 5, The Baklava Club. I’m afraid that’s all the explanation I can give you here.

I don’t want to press the eunuch theme (which makes some men cross their legs), but it is a metaphor for Yashim’s role as a sleuth. All through history, eunuchs were created to serve in the palace bureaucracy – it’s true for imperial China, and ancient Persia, as for the Byzantines and their successors, the Ottomans. Without family, their interests were allied with the ruler’s own ambitions and desires, making them men a ruler could safely trust.

The Byzantines are thought to have modelled their representations of angels on eunuchs: chaste, and intercessionary, passing between the divine and the sublunary world. Above all, their role is to serve.

So Yashim, too, serves his sultan, and the people, and the requirements of justice.

He is also a fabulous cook, preparing the Thursday night dinner for his old friend Count Palewski, Polish ambassador to the Porte, as the Ottoman court was called. He draws on the full repetoire of Ottoman Turkish dishes, many of them first elucidated in the kitchens of Topkapi Palace, where Yashim was trained. It’s this palace tradition that allows Turkish cookery to be ranked as one of the three great classical cuisines of the world. The other two are French and Chinese.

Yashim has been well-trained. He has worked in the palace, and out of it, for a Greek merchant. He speaks many languages, and reads voraciously – French novels are a favourite, passed to him by the Valide, the Queen Mother, of whom more in a subsequent post!

Yashim’s Kitchen III

I don’t know if you’re having turkey this year? Or a goose? We are going for guinea fowl because they are so tasty, with a duck for the crisp skin. I quite like turkey but it makes a greasy stock, and a good stock is what you want for this pilaf.

Mehmet the Conqueror’s Grand Vizier used to serve this as a working lunch in divan, the council meeting held on a Friday. Into it he tossed a gold chickpea for some lucky pasha to discover (or break a tooth on): the Ottoman version of putting a sixpence in the Christmas pudding, perhaps.

 

Ingredients:

Basmati rice

Chickpeas, soaked overnight and boiled for an hour (but tinned chickpeas are pretty handy, too)

An onion

butter, salt, festive stock

 

Rinse the rice in cold water until the water is clear – this is to remove the starch, which would make the rice too sticky. Leave it to soak while you melt the onions in butter. When they are soft, add the chickpeas.

Drain the rice, stir it into the pan and add enough stock to cover the rice and a little more.

When the stock has all been absorbed, check the rice; it should be a little nutty, but almost edible. If necessary add a little more stock until the rice is almost done.

Now comes the strange pilaf magic: cover the pan with a cloth and a lid. Over a whisper of heat, or none, let the rice steam for fifteen minutes.

Turn the rice out into a dish, helping to fluff it out with a fork.

This rice method sounds like complicated alchemy, but it’s simple really – and it works.
